POKOTABI / ZenibaSeiniku
大井町銭場精肉店
At ZenibaSeiniku, diners can savor Japanese Black Wagyu gently grilled over natural Mount Fuji lava plates, beef tongue paired with grated yam sauce, and 100% Wagyu hamburger steaks, available à la carte or across curated courses.
01 / ABOUT THE PLACE
Instead of conventional wire grills or iron hotplates, tables at ZenibaSeiniku are set with natural lava stone sourced from Mount Fuji. Emitting gentle far-infrared heat, the stone cooks the beef slowly at moderate temperatures to seal in natural juices and umami while generating minimal smoke, creating a relaxed setting to focus on the meat. The staff grill each cut with an eye for its specific texture and marbling, letting guests unwind and converse while each piece is cooked to order.
A house signature is the lightly seared beef tongue. Wide slices are kissed by the lava stone before being dipped into a homemade tororo (grated yam) sauce, where the smooth yam coats the tongue's tender snap with a rich yet refreshing finish quite different from typical barbecue glazes. Later in the courses comes the Wagyu mille-feuille loin, featuring layered ribbons of thinly sliced beef gently cooked until tender and served in a rich oxtail broth that pulls the deep meat flavors together with savory elegance.
Alongside grilled cuts, the kitchen prepares hand-kneaded 100% Wagyu hamburger steaks made with double-ground, deeply flavorful portions of beef. At lunch, these are served simply with rice and soup, while dinner guests can enjoy them à la carte or as part of a course to appreciate the juicy depth of the red meat.
A selection of starters, including fresh beef heart sashimi dressed plainly with salt and sesame oil or tender white omasum tripe served with umeboshi plum paste, offers a pleasant contrast between grilled dishes. For the finish, diners can choose between cold Japanese-style capellini noodles touched with tart plum or firm, chewy Morioka-style cold noodles, bringing the meal to an invigorating close.
